Easy Grilled Veg, Feta & Crushed Nut Salad

If there was ever a meal that is so quick, simple, full of flavour and gives dinners a wow, it has to be this grilled veg salad with feta and crushed nuts.
Using either a BBQ or if you prefer (like me) a grilled pan, pump up the heat and bring the pan/grill to hot. There's no need for oil.
I find the best veg to be asparagus and thinly sliced zucchini but you can also try thinly sliced red or green peppers. Heck, why not do them all?
Ingredients to serve 2
1 x bunch of aspargus
2 x medium sized zucchini thinly sliced
50grams of feta
Handful of almonds crushed.
Squeeze half lemon
Two tablespoons olive oil
Half a teaspoon of crushed garlic
Pinch of salt
Pinch of chilli flakes
Method
1. Place grill pan on stove, allow to heat to smoking.
2. While the pan is heating, thinly slice the zucchini.
3. Crush the almonds and set aside.
4. Prepare the dressing by squeezing half a lemon into a bowl or jar, add two tablespoons of good quality extra virgin olive oil, add half a teaspoon of crushed garlic (store bought pre-crushed garlic works best), pinch of salt and chilli flakes. Stir and set aside.
5. Place asparagus on the pan and char. Rotate every 1-2 minutes or as desired. Once done, remove and place on the serving platter.
6. Repeat the process with the zucchini until you have a nice char on both sides.
Once all the veg has been grilled with that delicious char, put the finishing touches by sprinkling the crushed almonds, crumble the feta and scattter over the salad and finally add the dressing.
I guarantee this will be your most favourite grilled veg salad. This goes brilliantly with a nice BBQ steak. Enjoy.
